Cooking SDGs in the Roca Brothers’ kitchen

The Roca Brothers welcomed Amina Stella Steiner, winner of the SDG Fund contest, to their kitchen.

Friday, 20 April 2018.- Korean Rice Rolls was on the menu today at El Celler de Can Roca restaurant as the winning recipe of #Recipe4Change, the first global Sustainable Cooking Contest. Organized by the United Nations Sustainable Development Goals Fund (SDG Fund), the six-month competition came to an end with an award ceremony at the Michelin star restaurant featuring the Roca Brothers, who also serve as UNDP Goodwill Ambassadors.

The contest attracted participants from all corners of the globe, who collectively submitted more than 2,000 recipes in response to the five cooking challenges launched every month on the chefs’ social media channels. Within the framework of the Agenda 2030 for Sustainable Development, home kitchens have been recognized as one the best ways to engage citizens in the fight against climate change. As Joan Roca observes, “what we eat and how we prepare it impacts directly our health and the health of our planet. We can take care of both from our own kitchens, every single day of the year.”

The winner of the #Recipe4Change contest, the Austrian blogger and Instagrammer Amina Stella Steiner, had the unique opportunity to prepare her recipe with the world-famous chefs.

The winners of the other four challenges were Rebeca de Torres (Spain), whose “Canned Salads” entry won the first challenge on combatting climate change; Ricardo Heredia (USA) for “Grilled Octopus” for the second challenge on the benefits of using local produce; Nuria Díez (USA) for “Passion Fruit and Basil” for the fourth challenge on healthy and sustainable desserts; and Ashley Mency (USA) for her “Poached Halibut” entry for the fifth challenge on fair trade.

SDG Fund Director Paloma Durán explained the contest’s objectives: “Our aim was to bring home the message that the fight against climate change and quest to achieve Sustainable Development Goals are not the exclusive domain of governments and large corporations. Each and every one of us can do our part and our kitchen is the perfect place to start. By making small and simple gestures, we can help protect the planet.”

Throughout the competition, the Roca Brothers offered suggestions on sustainable practices that home cooks can adopt to fight climate change and contribute toward achieving SDGs, including:

  • Use only as much water as strictly necessary.
  • Use water from boiling to water your plants and consider it for cooking processes.
  • Use local, sustainable and fair trade products.
  • Reduce your energy consumption by avoiding pre-heating the oven or overcooking food.
  • Consider energy-saving recipes that require limited cooking time.
  • Reduce food waste by using leftovers and composting whenever possible.
  • Use meal plans and shopping lists to cut down on food waste.
  • Develop healthy eating and lifestyle habits. Overeating isn’t healthy or sustainable.
  • Use less processed foods and avoid those with excess packaging.
  • Only use the dishwasher when it’s full.
  • Preserve seasonable fruits and vegetables using dehydration and lacto-fermentation techniques.
  • Reduce, recycle and reuse everything you can: containers, food, leftovers, etc.
  • Avoid using disposable tableware.
